Jiro’s Dreams of Sushi

Perfection is an unattainable goal to strive for at all times! The story of sushi master Jiro Ono captures the essence of these words more accurately than ever.

The pursuit of perfection helped him achieve world fame! Jiro owns a small sushi restaurant called “Sukiyabashi Jiro”, reservations for which must be made a month or two in advance.

The restaurant is located in the underground passage of one of Tokyo’s subway stations. The place has only 10 seats, in the format of high chairs at the bar. At the same time, the restaurant has the most honorable award – 3 Michelin stars.

There is no menu: no appetizers or drinks, just sushi! For each guest, the chef cooks personally, based on observations of human taste preferences. A typical meal consists of 20 servings, approximately one sushi a minute.

What is the secret to Jiro’s success?

Actually, there is no secret. It’s all about hard work, dedication, and a desire to bring every detail to perfection! The sushi chef is now 93 and he continues to make sushi, learn new things and improve his cooking techniques. His whole life has been devoted to his work since he was 7 years old. At 40, he opened his own restaurant and later received a Michelin Award and worldwide recognition.

Jiro’s restaurant has been visited by many celebrities including Arnold Schwarzenegger, Tom Cruise, David Beckham and Anne Hathaway. Renowned French chef Joël Robuchon called the sushi restaurant one of his favorites in the world. Former U.S. President Barack Obama and Japanese Prime Minister Shinzo Abe dined at the restaurant in 2014.
